From a scientific perspective it might make sense. When women are on steroids (testosterone) their clitoris grows in size, as does their desire for sex, and their aggressiveness towards sex. I'm thinking that maybe having a larger clit is a sign that they have more testosterone in their body than 'normal' women and, as such, have a sexual appetite more like that of a man.

I'm curious to know if you guys have noticed the same dynamic...

This might actually hold some truth to it. I've been with two girls that had noticeably larger clits, and they were wild from the start in bed. Others either stayed very reserved in bed, or it took me a hell of a long time to break them in.

I think environmental influences would play a part in level of sexual desire, too.
