Here's something I try to work into every set. The girls love it!

What you want to do is come up with some kind of game where she is working for you. This could be something reaslly silly like making her your bodyguard or you could pretend to be new in town and tell her she can be your tour guide. But, you do not want to hire her to be your personal stripper. Keep it light and fun.

Tell her you'll only pay her with M&Ms or oreo cookies or something else silly.

I came across another good roll play game that could be used on groups. Say something like: "You guys are too cool! We should all quit our jobs and start a company so we can hang out all the time. I'll be the CEO. What can you guys do?"

this trick worked for me at the galleria yesterday in the form of,
"hey, you two look like you might know something about fashion. do you know where i could find XXXX?"
debatingblahblahblah
"cool, 'cause im just running behind today. I also got to get..."
suggests places, says what they're up to.
"well, you've been terribly helpful, you should just come with me, be my personal shopper, and save me the trouble"

kept it up as a running thread for the rest of the afternoon with them.

Very cool!

I came across one that adds a little bit of a challange. Tell them "Wow, you guys are so much fun. We should quit our jobs and start a company so we can hang out all the time. I'll be the CEO. What can you do?"

Now. she's looking for a way to work for you. It makes her invest a little more in the interaction and you are the man in charge. 8) And it's fun!
