Social proof is from Robert Cialdini's book on social psychology called "Influence".
Social proof affects alot of things, not just women in a bar environment. The stock market is a good example.
When all the newspapers and media are saying the market is going down, it does. People follow what other people are doing.
If a girl sees a girl that is just like her with you, then she will more likely want to see herself with you.
This is why you want to open the friends first or open adjacent sets first. The target will most likely be influenced by the fact that her friends like you.
